Wilding Perry - Keeved Claret 2023 75cl

Claret is a very rare, late season pear; tiny, russeted and with full tannins, they seem prone to a spontaneous keeve. After keeping in stainless steel this was transferred to two old oak casks for fermentation, followed by brief maturation in steel and bottling. Rich and lusciously sweet this has aromas of dried fruit and poached pear. Drink with rich blue cheeses or dessert.
