Classic and concentrated, with a delicate harmony of florality and citrus - A great pairing for fresh fish dishes.

Sauvignon Blanc from 4 parcels of organically farmed vineyards with an average age of 45 years planted on Kimmeridgian limestone soils. The vineyards are ploughed, tended and harvested by hand, with all viticulture and winemaking carried out in accordance with the biodynamic calendar.

After picking, the fruit is triaged and whole bunch pressed before fermentation in stainless steel vessels. Around two thirds of the wine is aged on fine lees in stainless steel and the other third is aged in old oak for around 9-10 months. Great concentration and structure. Fresh lemon and orange zest gives way to white flowers and peach with a hint of smokiness and a fine chalky minerality.
