Anyone who tried our 2019 Dabinett & Foxwhelp cider will be interested to try this entirely different take on the blend from 2022.
2022 gave high sugar levels and intense aromatics, together with elevated tannins of exceptional quality. We were curious to see what this fruit would give us and so made up a blend of 25% Foxwhelp and 75% Dabinett as before.
Quickly it was apparent that this ferment was too slow to be viable for dry cider and so we racked once in the winter to keep some residual sugar (Rural Method). Although there is much varietal character on display, the exceptional nature of the vintage really comes to the fore, showing marmalade and kumquat character rather than Dabinett's usual orange flesh, and stewed strawberries rather than Foxwhelp's usual fresh strawberry.
The cider is sweet and rich but has the tannin and acid to balance that out. A real gastronomic cider.
