The Première blends organic Mourvèdre, Cinsault and Grenache grown on schist soils veined with white quartz. This adds an extra tension and minerality to the wine, giving it an almost saline spine, which is refreshing and attractive. Its colour, palest pink, hides concentrated wild strawberry fruit alongside notes of spice, citrus, peach and white flower.
Although just as pleasurable to drink its added intensity means it works with a wide range of foods, from simple grilled fish through cream sauces and even a barbecued sausage or two. Don’t say it too loudly, but this is a better than heavenly wine.
