In this relatively limited bottling Plouzeau conveys a very mineral and refined side of Chenin Blanc. Very pretty, subtle notes of white and yellow melon mingle with blanched almond and acacia honey (without the sweetness). There's smooth stoniness and pithiness in its texture, and elegance conveyed with lively freshness. This wine would be a fine accompaniment for a variety of non-spicy Asian cuisines -- especially with aromatic (rather than hot) Indian spices, or with Thai dishes involving coconut milk.
Production Details
From a beautiful clay flint soil located on the southern slopes of the Left Bank of Chinon, this wine is an example of a powerful and dry Chenin. On the vine, the load is very controlled in order to obtain a maximum of wealth. Just after pressing, the juice is put in barrels and then has a slow fermentation in cellar. It will then be bottled at the most favorable time.
