Domaine Louis Robin is run by brothers Thierry and Didier Robin, the eighth generation of the family to run the estate.Wines are made in the traditional style of Chablis, with Chardonnay grapes fermented at a cool 18-20 degrees celsius, in order to retain the characteristic minerality, acidity and freshness. They then go through malolactic fermentation, which gives substance and a creamy, rounded finish. This is then complemented by one year's ageing in stainless steel - the final stage in the winemaking process.
Very fresh and mineral, this Chablis evokes flint, green apple, lemon and grapefruit, leaving a taste of gunflint or mushroom on the palate. Very dry, lively with a bright acidity.
